oatmeal rolls

this recipe was given to me by my best friend, godmother of my youngest son, my mentor.......
(just in case she reads this, i have to give her the proper credit)
she brought me some of these rolls after littlest son was born.
i think these rolls are the reason i chose her to be his godmother.......
i think this might be from taste of home.

oatmeal rolls
cook:
2 c. water
2 c. oats
3 tbsp. butter
boil all together to make "oatmeal"

-------------------------
combine yeast with warm water while oatmeal cools.
*rapid rise yeast 2 1/4 tsp.
or
1 pkg. dry yeast with 1/3 c. warm water
*increase water by 4 1/2 tsp. with rapid rise yeast*

in a separate bowl combine:
1/3 c. brown sugar (or granulated organic cane sugar)
1 tbsp. regular sugar
1 1/2 tbsp. salt
mix in the oats
add 4 c. flour
*sprinkle water mixed with melted butter if flour mixture is too dry*
knead for 8 mins.
let rise approx. 1 hr. (unless using rapid rise-follow directions per package)
shape and set on greased pans, let rise again until doubled (approx. 1 hr.)
bake @ 350 for 20 mins.
makes 18 rolls

i have doubled this recipe and do not recommend it.
it is better to make two separate batches at the same time.

these are the rolls i never got to make for thanksgiving.
they are very yummy and will be consumed very rapidly.
hence the pictures being taken now as opposed to later.
i have used them as hamburger buns or served with jam and butter.
they are also great for st. patrick's day, for some reason they go really well with corned beef, cabbage and mashed potatoes!
